Harvested when the fruits are still green and firm, this oil carries the freshness of the new season within it. Like the first sip of a young wine, it speaks of beginnings – of the energy and vitality of a season just underway.

Tasting Notes
The aroma is deep and green, with notes of unripe pear and freshly cut grass. On the palate, powerful and vibrant: first nutty and fruity, then a wave of peppermint and spicy pungency that lingers long.

What makes it special
The Todolivo I-15 olives are harvested extremely early – between October 10 and 18, 2025 – before the first major rainfall, during the driest period of the year. This concentration, amplified by the still-unripe fruit, is reflected in the oil: exceptionally high polyphenol levels of 541 mg/kg, responsible for both the intense flavour and the health properties. Production is naturally very small.

How to use it
Primeur is perfect for the final moment – finishing a dish with a drizzle of fresh oil just before serving.

Looking for inspiration?

  • Wonderful over a carpaccio of red beetroot with goat’s cheese and toasted walnuts, where the oil’s pungency contrasts beautifully with the sweet vegetable.
  • Or over freshly cooked white beans with lemon zest and thyme – a simple dish that suddenly comes alive with this oil.
